Mexican Cole Slaw

Trying to make mexican food a little “cleaner” isn’t easy.  Especially when you grew up on rice and refried beans and that’s just what you are used to.  So I was really excited the first time I made this and we all sat down to a delicious meal, and left the table feeling satisfied rather than deprived.  I have never really liked cole slaw, but this mexican version with the lime and cilantro really hits the spot!  Even the kids enjoy it!  This meal is quick to put together, easy on the budget and so delicious!
Juice of 1 lime
4 tbsp. apple cider vinegar
1 clove garlic
1 tsp. comino
1 tsp. chili powder
Salt & pepper, to taste
1/4 c. olive oil
Handful of cilantro, washed & chopped
2 green onions, chopped
1/2 bag cole slaw mix (or chop your own)

Mix all the ingredients together and refrigerate to let the flavors blend.  (Anywhere from 1 – 8 hours.) Enjoy!
